[Recipe Alert] Funfetti Cookie Dough Protein Pancakes!


My kids love pancakes, so I started yesterday with freshly made pancakes for the week. I like to make a large batch and then put them in a sealed container. It's easy to grab them and heat them on the go. This time I made them a little different and added some Chocolate Chip Cookie dough and Rainbow Sprinkles.

Here's how I made them!

  • 2 cups unbleached bread flour
  • 4 scoops protein powder (e.g., KOS)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 8 ounces plain Greek yogurt (one cup)
  • 1 tablespoon vanilla extract
  • 1/4 cup flavorless oil
  • 2 eggs + 4 egg whites(from carton)
  • 100 grams sourdough starter
  • 1 cup chocolate chip cookie dough bites(I used Toll House "Bite Sized Chocolate Chip."
  • 1/4 cup Rainbow Sprinkles
  • 1 cup almond milk
  • 1-2 cups water to thin

Instructions:

  1. In a large bowl, mix the dry ingredients together.
  2. Add the wet ingredients and mix well. Use water to thin the batter to your desired consistency, similar to a normal pancake batter.
  3. Cook the pancakes on a hot griddle or pan.
  4. Top with fresh berries, and real maple syrup.
  5. Any leftovers can be frozen and reheated later.
